Weniger Salz, voller Geschmack - neue Ansätze in der Salzreduktion von Wurstwaren

Das Fraunhofer-Institut für Verfahrenstechnik und Verpackung IVV in Freising arbeitet an Wegen, den Salzgehalt in Lebensmitteln zu reduzieren, ohne dass dies auf Kosten des Geschmacks geht. In einem nun gestarteten Projekt wird gemeinsam mit bayerischen Unternehmen aus dem Bereich Fleisch- und Wurstwaren in den nächsten zwei Jahren ein industrietaugliches Verfahren zur Salzreduktion in Wurstwaren entwickelt. Angestrebt wird eine Reduktion von 30-40 % des Salzgehaltes. Am 1. Oktober 2014 trafen sich die Projektpartner in Freising zum Kick-off-Meeting.

Die meisten Menschen essen zu viel Salz. Fünf bis sechs Gramm pro Tag sind vollkommen ausreichend. An der Tagesordnung ist jedoch oft die doppelte Jxfcv.
