Gulfood 2016: IR-Desinfektion erhöht Haltbarkeit von Brot

Bei der Lebensmittelverarbeitung wird Infrarot-Wärme an vielen Stellen benötigt - sei es zum Füllen von Pralinen, zum Vorbräunen von Fertiggerichten, oder zur Reduktion von Schimmel auf gebackenem Brot. Tests zeigen, dass sich bei einer viersekündigen Behandlung mit IR die Haltbarkeit des Brotes um drei bis vier Tage verlängert. Durch die einfache Steuerung und Kontrolle der IR-Strahler wird die Qualität der Lebensmittel gewährleistet.
